How to Make Lu'au Stew in the Instant Pot
Anything with lū'au is a favorite in our house! I love this recipe for a few reasons: it's quick (what would usually take HOURS on the stove can be done in 45 minutes in the Instant Pot), it's delicious, super healthy, and has minimal clean up. Talk about the ultimate mom win!
I found the recipe from Keeping It Relle, my favorite local/Hawai'i recipe blogger. She makes the best local dishes, and she makes it simple enough for those of us who don't have a lot of time to spend in the kitchen, but want quality food for our family!

What is lu'au stew?
If you're unfamiliar, lū'au stew is made using the lau (leaves) of the kalo plant. Kalo is highly prized by Hawaiians & Polynesians. We believe that is actually our eldest ancestor and forever ties us to the land.
Kalo is extremely healthy and rich in nutrients. The corm (kalo) of the plant is made into poi, which is a true superfood and what a lot of Hawaiians give as the first solid food to babies. The leaves (lau) is also very rich in vitamins A and C making it a great choice.
